Yes, it's now possible! Thanks to Controlled Atmosphere (CA) storage. This method involves storing apples in a warehouse where temperature, oxygen, humidity and light levels are controlled, to create an environment in which ripening is slowed down. In other words, it's as if the apples were asleep.
In Quebec, the varieties available year-round are McIntosh, Cortland,Empire and Spartan. As production increases over the years,Honeycrisp,Ambrosia and many others will be added to the list.
In addition to C.A., efficient storage management is of paramount importance, and this starts as soon as the apples are picked. In the orchard, ripeness tests are carried out to determine whether the apples should be stored for the long, medium or short term. At the last minute, the apples are taken out of the warehouses for packing, where they undergo rigorous quality control(Pommes Qualité Québec criteria) before going to the grocery stores.
