Quinoa salad with 3 apples, cheese and walnuts

Salad
- 370 g (2 cups) cooked quinoa
- 1 Ginger Gold apple, peeled and diced
- 1 McIntosh apple, unpeeled, diced
- 2 Empire apples, peeled and diced
- 1 bunch parsley, leaves removed
- 100 g (1 cup) walnuts
- 225 g (8 oz) cheddar cheese, cubed
- 250 ml (1 cup) extra-virgin olive oil
- 3 tbsp. apple juice
- 1 tsp. sugar
- 1 teaspoon onion powder
- 1 tablespoon wine vinegar
- 1 hot pepper
Vinaigrette
Preparation
- Prepare the salad: In a large bowl, combine all ingredients.
- Prepare dressing: In food processor or blender, blend ingredients in small batches until smooth. Pour over salad and toss.
- Serve immediately.
