Quinoa salad with 3 apples, cheese and walnuts

Ingredients

Salad

  • 370 g (2 cups) cooked quinoa
  • 1 Ginger Gold apple, peeled and diced
  • 1 McIntosh apple, unpeeled, diced
  • 2 Empire apples, peeled and diced
  • 1 bunch parsley, leaves removed
  • 100 g (1 cup) walnuts
  • 225 g (8 oz) cheddar cheese, cubed
  • Vinaigrette

    • 250 ml (1 cup) extra-virgin olive oil
    • 3 tbsp. apple juice
    • 1 tsp. sugar
    • 1 teaspoon onion powder
    • 1 tablespoon wine vinegar
    • 1 hot pepper

Preparation

  1. Prepare the salad: In a large bowl, combine all ingredients.
  2. Prepare dressing: In food processor or blender, blend ingredients in small batches until smooth. Pour over salad and toss.
  3. Serve immediately.
