Alsatian maple tart

- 1 tbsp. butter
- 1 pie crust (store-bought)
- 5 apples, peeled and sliced
- 3 large eggs
- 1 egg yolk
- 125 ml (1/2 cup) 35% whipping cream
- 1 pinch ground nutmeg
- 1/2 teaspoon vanilla extract
- 2 tbsp. all-purpose flour
- 110 g (4 oz) maple sugar + 2 tbsp (for garnish)
Preparation
- Preheat oven to 190°C (375°F).
- Butter a 20 cm (8") pie dish. Line dish with pastry dough. Cover with apple slices in a rosette pattern.
- In a bowl, whisk together eggs, egg yolk, cream, nutmeg, vanilla, flour and 110 g (4 oz) maple sugar. Pour into pie crust.
- Reduce oven temperature to 180°C (350°F). Place the pie in the center of the oven and bake for about 35 minutes, or until the crust is golden and the filling is set.
- Remove tart from oven. Sprinkle with remaining maple sugar and let cool 15 minutes before serving.
