Apple and Oka Aperitif Pizzas

Ingredients

  • 1 pizza dough ball, 250 g (approx. 1/2 lb)
  • 80 ml (1/3 cup) sour cream
  • 2 apples (Cortland, Empire or Délicieuse jaune)
  • 80 ml (1/3 cup) chopped pecans
  • 6 slices Oka raclette cheese, halved
  • 10 ml (2 teaspoons) chopped thyme
  • Pepper to taste
  • 45 ml (3 tablespoons) maple syrup

 

Preparation

  1. Preheat oven to 205°C (400°F).
  2. On a floured surface, stretch pizza dough into a large circle. Using a cookie cutter or glass, cut dough into 12 circles, each 7.5 cm (3 in.) in diameter. Place dough circles on a baking sheet lined with parchment paper.
  3. Spread the sour cream over the pastry circles, leaving a 1 cm (1/2") border.
  4. Mince apples. On each pizza, fan out a few apple slices. Garnish with pecans and top with a slice of Oka cheese. Sprinkle with thyme and pepper.
  5. Bake for 20 minutes, until golden around the edges.
  6. Just before serving, drizzle maple syrup over each pizza.
