Thyme-flavoured apple and cheddar tartlets

Ingredients

  • 12 puff pastry tarts, frozen
  • 1 sour apple, peeled, cored and finely diced
  • 120 g (4 oz) old cheddar (2 years), grated
  • 3 ml (1/2 teaspoon) fresh thyme, chopped
  • 125 ml (1/2 cup) 35% cream
  • 1 egg
  • Salt and pepper to taste

Preparation

  1. Preheat oven to 180°C (350°F). Place frozen tarts on a baking sheet. Set aside.
  2. In a bowl, combine apple, cheddar and thyme. In another bowl, whisk cream and egg, season with salt and pepper. Stir cream mixture into apple mixture.
  3. Spread the mixture over the tart shells. Bake for 30 minutes in the lower part of the oven, until the mixture has set and the pastry is golden-brown. Serve with salad.

Delicious tarts with a fresh taste. I can only recommend using an old cheddar.
