Apple and goat cheese pizza

Ingredients

  • 675 g (1 1/2 lb) pizza dough (homemade or store-bought)
  • 250 ml (1 cup) tomato coulis
  • 3 tablespoons extra-virgin olive oil
  • 2 onions, peeled and sliced
  • 3 unpeeled apples, diced
  • 2 tbsp. finely chopped fresh oregano
  • 1/2 teaspoon pepper
  • 4 tbsp. whole almonds
  • 225 g (8 oz) crumbled goat cheese

Preparation

  1. Preheat oven to 200°C (400°F). Line 2 baking sheets with parchment paper.
  2. Divide the dough into 4 pieces. Roll each into a circle, then place 2 circles on each baking sheet. Brush each circle with tomato coulis.
  3. Heat the olive oil in a frying pan. Add onions and sauté over medium heat for 4 minutes. Add diced apple and sauté 3 minutes. Sprinkle with oregano and pepper. Add almonds and toss. Spread mixture over pizza dough. Place in the oven and bake for approx. 35 minutes, or until golden brown.
  4. Remove baking sheets from oven. Garnish with crumbled goat's cheese and serve.
