Apple and goat cheese pizza

- 675 g (1 1/2 lb) pizza dough (homemade or store-bought)
- 250 ml (1 cup) tomato coulis
- 3 tablespoons extra-virgin olive oil
- 2 onions, peeled and sliced
- 3 unpeeled apples, diced
- 2 tbsp. finely chopped fresh oregano
- 1/2 teaspoon pepper
- 4 tbsp. whole almonds
- 225 g (8 oz) crumbled goat cheese
Preparation
- Preheat oven to 200°C (400°F). Line 2 baking sheets with parchment paper.
- Divide the dough into 4 pieces. Roll each into a circle, then place 2 circles on each baking sheet. Brush each circle with tomato coulis.
- Heat the olive oil in a frying pan. Add onions and sauté over medium heat for 4 minutes. Add diced apple and sauté 3 minutes. Sprinkle with oregano and pepper. Add almonds and toss. Spread mixture over pizza dough. Place in the oven and bake for approx. 35 minutes, or until golden brown.
- Remove baking sheets from oven. Garnish with crumbled goat's cheese and serve.
