OKA Apple and Cheese Flamiche Tart

French bread:
- 6 g instant yeast
- 450 g water
- 600 g unbleached flour
- 12 g salt
Pie-making:
- 500 g raw bread dough
- 20 ml olive oil
- 225 g OKA cheese, thinly sliced
- 2 unpeeled Quebec apples, thinly sliced
- 80 g heavy cream 40% (crème fraîche épaisse)
- Pepper, finely ground
Preparation
French bread
- Make a 1st flap after 20 minutes, a 2nd after 20 minutes and leave to grow for 60 minutes.
Making the tart
- Spread 500 g of French bread dough with olive oil on a 13-inch aluminum pizza pan.
- Pause for 5 minutes, then finish spreading.
- Alternate thin slices of OKA cheese with thin slices of Québec apples.
- Brush with 80 g of 40% heavy cream and season generously with pepper.
- Let stand for 30 minutes, then bake for 22 minutes at 230°C (450°F).
