OKA Apple and Cheese Flamiche Tart

Ingredients

French bread:

  • 6 g instant yeast
  • 450 g water
  • 600 g unbleached flour
  • 12 g salt

Pie-making:

  • 500 g raw bread dough
  • 20 ml olive oil
  • 225 g OKA cheese, thinly sliced
  • 2 unpeeled Quebec apples, thinly sliced
  • 80 g heavy cream 40% (crème fraîche épaisse)
  • Pepper, finely ground

Preparation

French bread

  1. Make a 1st flap after 20 minutes, a 2nd after 20 minutes and leave to grow for 60 minutes.

Making the tart

  1. Spread 500 g of French bread dough with olive oil on a 13-inch aluminum pizza pan.
  2. Pause for 5 minutes, then finish spreading.
  3. Alternate thin slices of OKA cheese with thin slices of Québec apples.
  4. Brush with 80 g of 40% heavy cream and season generously with pepper.
  5. Let stand for 30 minutes, then bake for 22 minutes at 230°C (450°F).
