Shrimp tacos with apples and cilantro

Ingredients

  • 4 large wheat tortillas
  • 2 tablespoons vegetable oil
  • 1 onion, peeled and finely chopped
  • 2 red peppers, cut into strips
  • 1 hot pepper, chopped
  • 675 g (1 1/2 lb) peeled medium shrimp
  • 3 apples, peeled and thinly sliced
  • 2 tbsp. store-bought taco spices
  • 125 ml (1/2 cup) apple juice
  • 1 bunch coriander, finely chopped
  • 1 small romaine lettuce, leaves removed

Preparation

  1. Preheat oven to 200°C (400°F).
  2. Place each tortilla on an upside-down ovenproof bowl. Place a second bowl over the tortillas to give them a corolla shape. Place on a baking sheet and bake for 7 minutes.
  3. Remove the baking sheet from the oven and allow the tortillas to cool on the bowls. Unmold and turn tortillas over.
  4. Heat oil in a skillet. Add onion and peppers. Sauté over medium heat for 5 minutes. Add hot pepper, shrimp and apples. Sauté for 5 minutes. Sprinkle with taco spices and stir. Pour in apple juice, bring to a boil and cook for 5 minutes.
  5. Remove pan from heat. Add cilantro and stir.
  6. Brush inside of tortillas with taco sauce. Divide shrimp-apple mixture among tortillas. Garnish with romaine leaves and serve immediately.
