Apple roses

- 2 to 3 apples (Cortland, Honeycrisp or Ambrosia)
- 45 ml (3 tablespoons) maple sugar
- 2 packages puff pastry, 400 g each
Preparation
- Preheat oven to 190°C (375°F).
- Remove core from apples. Using a mandolin, finely slice the apples.
- In a bowl, combine apple slices with half the maple sugar and 15 ml (1 tbsp.) lemon juice. Stir gently.
- Cover bowl with plastic wrap. Refrigerate 15 minutes, until apples are softened. Drain.
- Cut the leafy dough into ten 5 cm (2") long strips.
- On half the surface of each pastry strip, place about twelve apple slices, one on top of the other. Sprinkle with remaining maple sugar.
- Fold the unfilled part of the pastry strips over the apple slices. Gently roll the pastry strips lengthwise into roses.
- Butter the cavities of a muffin tin, then place the roses inside. Bake for 30-35 minutes. Remove from oven and unmould. Let cool.
