Apple roses

Ingredients

  • 2 to 3 apples (Cortland, Honeycrisp or Ambrosia)
  • 45 ml (3 tablespoons) maple sugar
  • 2 packages puff pastry, 400 g each

Preparation

  1. Preheat oven to 190°C (375°F).
  2. Remove core from apples. Using a mandolin, finely slice the apples.
  3. In a bowl, combine apple slices with half the maple sugar and 15 ml (1 tbsp.) lemon juice. Stir gently.
  4. Cover bowl with plastic wrap. Refrigerate 15 minutes, until apples are softened. Drain.
  5. Cut the leafy dough into ten 5 cm (2") long strips.
  6. On half the surface of each pastry strip, place about twelve apple slices, one on top of the other. Sprinkle with remaining maple sugar.
  7. Fold the unfilled part of the pastry strips over the apple slices. Gently roll the pastry strips lengthwise into roses.
  8. Butter the cavities of a muffin tin, then place the roses inside. Bake for 30-35 minutes. Remove from oven and unmould. Let cool.
