Turkey curry with apples

Ingredients

  • 900 g (2 lb) turkey cubes
  • 1 tsp. turmeric powder
  • 1 tablespoon all-purpose flour
  • 4 onions, sliced
  • 4 garlic cloves
  • 1 stalk celery, finely chopped
  • 500 ml (2 cups) chicken broth
  • 4 kefir lime leaves
  • 1 cinnamon stick
  • 1 tbsp. ground curry
  • 500 ml (2 cups) coconut milk
  • 60 ml (1/4 cup) lime juice
  • 3 McIntosh apples, peeled and cubed
  • Salt and pepper

Preparation

Slow cooker

  1. Place turkey cubes in slow cooker. Sprinkle with turmeric and flour and toss to combine. Season with salt and pepper.
  2. Heat vegetable oil in a large skillet. Add onions, garlic and celery. Sauté over medium heat for 3 minutes. Pour in chicken broth and bring to a boil. Pour into slow cooker. Add kefir lime leaves, cinnamon stick and ground curry. Cover and cook on low for 5 hours.
  3. Add coconut milk, lime juice and apples. Cover and cook on high for 20 minutes.
  4. Divide between plates and serve with steamed rice.

Simmered

  1. Heat vegetable oil in a large saucepan. Add onions, garlic and celery. Sauté for 3 minutes over medium heat. Add turkey cubes and sauté for 5 minutes. Season with salt and pepper. Sprinkle with flour and stir. Pour in chicken broth and bring to a boil, stirring constantly.
  2. Add kefir lime leaves, cinnamon stick, turmeric and ground curry. Cover halfway and cook for 2 minutes.
  3. Add apples, lime juice and coconut milk. Cook for 15 minutes over low heat.
  4. Divide between plates and serve with steamed rice.
