Delicious, moist, and irresistibly fragrant, these Quebec apple and caramel fritters from Jade (Festin Festive) are a pure delight to share. The apple pieces add a fruity, melt-in-your-mouth touch that pairs perfectly with the richness of the caramel. Perfect for a festive brunch, a comforting dessert, or a gourmet snack, these homemade fritters evoke the warmth of home cooking and local treats.

Ingredients

1 ½ cups all-purpose flour

2 teaspoons of baking powder

1 teaspoon of cinnamon

½ tsp. of sea salt

3 tablespoons sugar

1/2 cup buttermilk

1/2 cup of milk

1 teaspoon vanilla extract

2 large eggs

1 cup of finely diced Quebec apples (about 2 apples)

Preparation

  1. Peel the apples, then cut them into small cubes.
  2. Combine the dry ingredients.
  3. Add the liquid ingredients, then stir in the apples.
  4. Preheat the deep fryer to high heat.
  5. Using spoons, form small balls of dough, each about 30 ml (2 tablespoons). Drop them into the hot oil. Fry until they are golden brown on one side, then flip them over. Fry until both sides are golden brown.
  6. Drain on paper towels.
  7. Heat the Chocolats Favoris caramel fondue for 20 seconds in the microwave, then pour it over the doughnuts.
  8. Enjoy!

Tips and tricks

  • Choose a firm, slightly tart apple, such as a Cortland, Spartan, or Honeycrisp, so that it retains a nice texture when cooked.
  • Cut the apples into small cubes so they blend well into the batter and cook evenly in the fritters.
  • Keep the oil at a steady temperature to ensure the fritters are golden brown on the outside and soft on the inside.
  • Serve the fritters while they're still warm to fully enjoy their soft texture and the rich, melt-in-your-mouth caramel.
