Cider and spice fritters
These spiced cider doughnuts are the perfect embodiment of Quebec's autumn flavors. Soft, slightly sweet and delicately flavored with cinnamon, nutmeg and cloves, they are enhanced by the addition of Quebec apple cider, which gives them a light texture and an incomparable fruity taste.

Ingredients
375 ml (2 1/2 cups) all-purpose flour
15 ml (1 tablespoon) cornstarch
5 ml (1 tsp.) baking powder
5 ml (1 tsp.) baking soda
2.5 ml (1/2 tsp.) salt
2.75 ml (3/4 tsp.) ground cinnamon
2.5 ml (1/2 tsp.) grated nutmeg
125 ml (1/2 cup) sugar
180 ml (3/4 cup) Ô fraise strawberry flavored cider - Coteau St-Paul
1 egg, beaten
45 ml (3 tablespoons) applesauce
45 ml (3 tablespoons) melted butter
Vegetable oil for frying, in sufficient quantity
For sugar and spice coating:
125 ml (1/2 cup) sugar
10 ml (2 teaspoons) ground cinnamon
10 ml (2 teaspoons) ground cardamom
Preparation
- In a large bowl, combine all dry ingredients. Stir in cider, egg and melted butter, then mix well.
- Cover the dough with plastic wrap and refrigerate for one hour.
- In a medium saucepan over medium heat, pour in the oil (about 3" high) and heat. Using a thermometer, check the temperature. When it reads 360°F, the oil is ready for frying.
- Using a small ice-cream scoop or 2 tablespoons, scoop about 15 ml (1 tablespoon) of dough and drop into hot oil. Cook about 5 to 6 fritters at a time. When the fritters are golden-brown, remove them with a slotted spoon and drain on a plate covered with paper towels. Repeat until all doughnuts are cooked.
- In a small bowl, combine the sugar and cinnamon, then spread the mixture on a plate.
- While the doughnuts are still warm, roll them in the sugar-spice mixture. Then enjoy.
Tips and tricks
Doughnuts can be frozen and stored in an airtight container for up to two months. Thaw for 30 mins, then reheat in a 350°F oven about 10 mins before serving.
