Apple crispy rice bowl

Tasty, nutritious and easy to customize, this crispy rice bowl features Quebec Cortland apples in a vegan version that's anything but boring! A perfect recipe for a light supper, a stylish lunch or a meal to share.

Ingredients

Crispy rice

 

  • 2 cups cold cooked jasmine rice
  • 1 tbsp. toasted sesame oil
  • 1 tbsp. soy sauce
  • 2 teaspoons maple syrup
  • A good pinch of salt, to taste

 

Crispy tofu

 

  • 1 lb (454 g) firm tofu, pressed, cubed
  • 3 tbsp. cornstarch
  • 2 tablespoons vegetable oil
  • A pinch of garlic and onion powder
  • Salt and black pepper to taste

 

Vegetables

 

  • 2 Quebec Cortland apples, julienned
  • 1 cup cucumbers, diced
  • 2 carrots, cut into ribbons
  • 2 lawyers, clear-cut
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds, if desired.

 

Creamy spicy sauce

 

  • 2 tablespoons mayonnaise
  • 2 tbsp. Greek yogurt
  • 1 tablespoon maple syrup
  • 2 tsp. soy sauce
  • 1 to 2 tsp. sriracha sauce, to taste

A dash of lemon juice

Preparation

Crispy rice

Preheat air fryer to 400 F. Mix rice with sesame oil, soy sauce, maple syrup and salt.

Place a sheet of parchment paper in the air fryer container and spread the rice evenly. Press the rice lightly with the back of a spoon to compact it. Cook for 14 minutes, or until the underside is golden and crisp. Set aside to cool.

Crispy tofu

Coat tofu cubes in cornstarch. Heat oil in a nonstick skillet and cook tofu cubes over medium heat until golden and crisp on both sides, about 8 to 10 minutes. Add garlic and onion powder, then salt and pepper to taste. Set aside to cool.

Creamy spicy sauce

Combine all sauce ingredients in a small bowl. Set aside for later use.

Assembly

Place a small amount of hot crispy rice in each bowl. Add the crispy tofu, julienned Quebec Cortland apples, vegetables and avocado slices. Sprinkle with sliced green onions and sesame seeds. Pour the spicy cream sauce over all, then serve immediately.

Tips and tricks

  • Vary the textures: add edamame or sprouts for extra crunchy.
  • Substitute tempeh or even crispy chicken for the tofu, if desired.

  • Adjust the level of spiciness in the sauce according to your tolerance to sriracha.

  • This bowl is easy to prepare in advance: keep the elements separate until you're ready to serve to keep everything fresh and crunchy.
