Boston lettuce with shallots and apples

Ingredients

  • 3 tbsp. mayonnaise
  • 2 teaspoons Dijon mustard
  • 125 ml (1/2) apple juice
  • 1 Boston lettuce, chopped
  • 375 g (2 cups) cooked rice
  • 2 shallots, finely chopped
  • 2 apples, chopped
  • 1 Boston lettuce, leaves removed
  • 1 tsp. paprika
  • Salt and pepper

Preparation

  1. In a bowl, combine mayonnaise, mustard and apple juice. Add chopped lettuce, cooked rice, shallots and apples. Season with salt and pepper. Mix gently.
  2. Divide mixture among Boston lettuce leaves. Sprinkle with paprika and serve immediately.
