Apple and cranberry energy balls

1 Honeycrisp or Cortland apple
125 ml (½ cup) dried cranberries
375 ml (1 ½ cups) quick-cooking rolled oats
125 ml (½ cup) almond butter
60 ml (¼ cup) pumpkin seeds
60 ml (¼ cup) honey
5 ml (1 teaspoon) cinnamon
1 ml (¼ tsp.) nutmeg
Preparation
- Grate the apple and place in a paper towel or clean cloth. Form a small bundle, then press over the sink to release the water.
- Place all ingredients in food processor bowl. Mix well.
- Using your hands, form 15 ml (1 tablespoon) of the mixture into balls.
Tips and tricks
Notes
Energy Balls can be stored in the refrigerator for about 3 days. They can also be frozen in an airtight container for up to 3 months.
