Braised beef with apples

Ingredients

  • 2 tablespoons vegetable oil
  • 2 onions, peeled and quartered
  • 675 g (1 1/2 lb) beef cubes
  • 2 tablespoons all-purpose flour
  • 1 liter (4 cups) beef broth
  • 250 ml (1 cup) apple juice
  • 1 red bell pepper, cut into strips
  • 3 sprigs thyme
  • 6 apples, peeled and quartered
  • Salt and pepper

Preparation

  1. Preheat oven to 190°C (375°F).
  2. Heat the oil in a large saucepan. Add onions and sauté over medium heat for 3 minutes. Add beef cubes and sauté for 5 minutes. Season with salt and pepper. Sprinkle with flour and toss.
  3. Pour in broth and apple juice. Bring to a boil, stirring constantly. Stir in bell pepper, thyme and apples. Cover pan. Bake for 1 hour 30 minutes.
  4. Remove from oven and let stand 10 minutes before serving.
