Bread and dried fruit puddings

Ingredients

  • 750 ml (3 cups) day-old bread, cubed
  • 125 ml (½ cup) Compliments dried apricots, coarsely chopped
  • 125 ml (½ cup) Compliments Large Pitted Prunes, coarsely chopped
  • 60 ml (¼ cup) Compliments Sweetened Dried Cranberries, coarsely chopped
  • 3 eggs
  • 75 ml (1/3 cup) sugar
  • 250 ml (1 cup) apple juice
  • 175 ml (¾ cup) milk
  • 5 ml (1 teaspoon) vanilla extract
  • 1 ml (¼ tsp.) salt
  • 125 ml (½ cup) Compliments Sensations Peach Jam with Ice Wine

Preparation

  1. Preheat oven to 150°C (300°F). Lightly spray a 24-cup miniature muffin tin with cooking spray.
  2. Mix bread, apricots, prunes and cranberries in a large bowl. Beat eggs with sugar until pale yellow. Add apple juice, milk, vanilla and salt, and whisk.
  3. Pour over bread mixture and leave to soak for 5 minutes.
  4. Divide bread mixture between muffin cups. Bake for 20 minutes or until set. Cool briefly and top with peach jam and ice wine.
