Ingredients
- 750 ml (3 cups) day-old bread, cubed
- 125 ml (½ cup) Compliments dried apricots, coarsely chopped
- 125 ml (½ cup) Compliments Large Pitted Prunes, coarsely chopped
- 60 ml (¼ cup) Compliments Sweetened Dried Cranberries, coarsely chopped
- 3 eggs
- 75 ml (1/3 cup) sugar
- 250 ml (1 cup) apple juice
- 175 ml (¾ cup) milk
- 5 ml (1 teaspoon) vanilla extract
- 1 ml (¼ tsp.) salt
- 125 ml (½ cup) Compliments Sensations Peach Jam with Ice Wine
Preparation
- Preheat oven to 150°C (300°F). Lightly spray a 24-cup miniature muffin tin with cooking spray.
- Mix bread, apricots, prunes and cranberries in a large bowl. Beat eggs with sugar until pale yellow. Add apple juice, milk, vanilla and salt, and whisk.
- Pour over bread mixture and leave to soak for 5 minutes.
- Divide bread mixture between muffin cups. Bake for 20 minutes or until set. Cool briefly and top with peach jam and ice wine.
