Cannolis with caramelized Empire apples, mascarpone and 4 spices

Ingredients

  • 24 commercial cannolis shells
  • 120 ml (1/2 cup) chocolate chips, melted
  • 3 Empire apples, cored
  • 100 g (100 ml) salted butter
  • 50 g (50 ml) white sugar
  • 250 ml (1 cup) whipping cream
  • 100 g (100 ml) white sugar
  • 500 g (2 x 250 g containers) mascarpone cheese
  • 10 ml (2 teaspoons) 4-spice blend

Preparation

  1. Dip the 2 ends of the cannoli in the chocolate, set aside to harden.
  2. Finely dice the apples (brunoise).
  3. Melt butter with sugar (50 g), then sauté apples until caramelized. Cool to room temperature.
  4. Whip the cream with the 100g sugar, then fold the mascarpone, cooled apples and spices into the mixture.
  5. Using a piping bag (large straight tip), fill the shells.
  6. Serve immediately.
