Crisp caramelized apple muffins

Trim:
- 2-3 apples (1 cup), peeled, cored and cubed
- 85 ml (1/3 cup) brown sugar or maple sugar
- 65 ml (1/4 cup) flour
- 125 ml (1/2 cup) melted butter
- 15 ml (1 tablespoon) butter
- Cinnamon or nutmeg to taste
Muffins:
- 500 ml (2 cups) whole-wheat flour
- 125 ml (1/2 cup) sugar or brown sugar
- 5 ml (1 teaspoon) salt
- 15 ml (1 tablespoon) baking powder
- 5 ml (1 teaspoon) cinnamon
- 125 ml (1/2 cup) chopped walnuts
- 2 eggs
- 250 ml (1 cup) buttermilk
- 2-3 apples (1 cup), peeled and grated
- 125 ml (1/2 cup) oil or unsweetened applesauce
Preparation
- Preheat oven to 180°C (350°F).
- Place paper moulds in a muffin tin.
- Combine flour, brown sugar, salt, baking powder and cinnamon in a large bowl.
- Add the walnuts.
- Whisk the eggs in another bowl, then add the buttermilk, grated apples and oil.
- Pour this mixture into the dry ingredients and stir to moisten.
- Spoon batter into muffin cups lined with paper liners; fill to 2/3 full.
- Bake for 10 to 15 minutes until golden brown.
- While baking, combine apples, brown sugar, flour and melted butter in a bowl.
- Melt the butter in a saucepan and add the mixture.
- Cook until apples are soft and golden.
- Remove the muffins from the oven and, while they're still warm, make cavities for the topping.
- Add the topping to the muffins and finish baking them (about 5 minutes).
