Crisp caramelized apple muffins

Ingredients

Trim:

  • 2-3 apples (1 cup), peeled, cored and cubed
  • 85 ml (1/3 cup) brown sugar or maple sugar
  • 65 ml (1/4 cup) flour
  • 125 ml (1/2 cup) melted butter
  • 15 ml (1 tablespoon) butter
  • Cinnamon or nutmeg to taste

Muffins:

  • 500 ml (2 cups) whole-wheat flour
  • 125 ml (1/2 cup) sugar or brown sugar
  • 5 ml (1 teaspoon) salt
  • 15 ml (1 tablespoon) baking powder
  • 5 ml (1 teaspoon) cinnamon
  • 125 ml (1/2 cup) chopped walnuts
  • 2 eggs
  • 250 ml (1 cup) buttermilk
  • 2-3 apples (1 cup), peeled and grated
  • 125 ml (1/2 cup) oil or unsweetened applesauce

Preparation

  1. Preheat oven to 180°C (350°F).
  2. Place paper moulds in a muffin tin.
  3. Combine flour, brown sugar, salt, baking powder and cinnamon in a large bowl.
  4. Add the walnuts.
  5. Whisk the eggs in another bowl, then add the buttermilk, grated apples and oil.
  6. Pour this mixture into the dry ingredients and stir to moisten.
  7. Spoon batter into muffin cups lined with paper liners; fill to 2/3 full.
  8. Bake for 10 to 15 minutes until golden brown.
  9. While baking, combine apples, brown sugar, flour and melted butter in a bowl.
  10. Melt the butter in a saucepan and add the mixture.
  11. Cook until apples are soft and golden.
  12. Remove the muffins from the oven and, while they're still warm, make cavities for the topping.
  13. Add the topping to the muffins and finish baking them (about 5 minutes).
