Would you like to rediscover the comforting taste of McDonald's famous apple turnovers, but in a homemade version and with quality ingredients? This recipe offers a revisited version of this classic, with a crisp, golden pastry, a generous filling of Quebec apples and a savory spice aroma.

Perfect for a gourmet snack, a nostalgic dessert or an upgraded coffee break, these turnovers are simple to make at home and can be baked or deep-fried for an even more decadent version. As well as being made with local apples, they allow you to control the sugar level and adapt the spices to your taste.

This recipe is ideal for cooking up surplus apples, introducing children to baking or impressing your guests with a dessert reminiscent of childhood... only better! A real favorite with lovers of classic desserts, both crisp on the outside and melt-in-your-mouth on the inside.

Ingredients

For the apple filling :

3 medium Québec Cortland apples, peeled, cored and finely diced

1 tablespoon unsalted butter

2 tbsp. brown sugar

1 tsp. ground cinnamon

1 tbsp. freshly squeezed lemon juice

1/2 tsp. cornstarch

3 tbsp. water

For puff pastries :

1 397 g commercial puff pastry, thawed

1 beaten egg or 2 tablespoons milk (for sealing and brushing)

Granulated sugar, for sprinkling

Preparation

  1. Melt the butter in a saucepan over medium heat. Add the diced Quebec Cortland apples and sauté for 4-5 minutes, until they begin to soften.
  2. Add the brown sugar, cinnamon and lemon juice. Cook for a further 2-3 minutes to caramelize slightly. Dissolve the cornstarch in the water, then add this mixture to the saucepan. Stir constantly for 1-2 minutes or until thickened. Allow to cool completely.
  3. Lightly roll out the puff pastry on a floured surface and cut into 6 equal rectangles. Place 2 tablespoons of cooled apple filling on one half of each rectangle, leaving a border of about 1 cm.
  4. Brush the edges of the dough with egg or milk. Fold the dough into a turnover and press the edges together with a fork to seal. Make 2-3 small cuts in the top to allow steam to escape, brush the top with egg or milk, and sprinkle with sugar.
  5. Preheat air fryer to 360 F for 2-3 minutes. Lightly spray basket with non-stick spray or line with parchment paper. Arrange the puff pastries in the basket, leaving space between them. Bake for about 12 minutes or until golden brown, turning halfway through.
  6. Leave to cool for 5 minutes before serving.

Tips and tricks

Bake at 400 F for 18 to 22 minutes.

Use firm apples like Cortland or Lobo for a filling that holds together well.

Let cool slightly before serving to avoid burning and allow the filling to set a little.

For extra crunch, brush the pastry with beaten egg and sprinkle with sugar before baking.

Add a hint of nutmeg or ginger to enhance the flavours.

Freeze them uncooked to keep them on hand at all times!
