Mesclun of chicken and apples from the orchard

Vinaigrette
- 60 ml (1/4 cup) mayonnaise
- 60 ml (1/4 cup) plain yogurt
- 30 ml (2 tablespoons) lemon juice
- Salt and freshly ground pepper to taste
- 454 g (1 lb.) cooked, skinless chicken, diced
- 3 stalks celery, thinly sliced
- 30 ml (2 tablespoons) raisins
- 2 Paulared, Lobo or Cortland apples, unpeeled
- Mesclun or salad
- 45 ml (3 tablespoons) walnuts
Preparation
- In a large salad bowl, combine all dressing ingredients.
- Add chicken cubes, celery and raisins. Dice apples and add to mixture immediately. Stir to combine.
- In a serving bowl, arrange the mesclun or salad and place the chicken mixture on top. Garnish with walnuts. Serve immediately.
