Mesclun of chicken and apples from the orchard

Ingredients

Vinaigrette

  • 60 ml (1/4 cup) mayonnaise
  • 60 ml (1/4 cup) plain yogurt
  • 30 ml (2 tablespoons) lemon juice
  • Salt and freshly ground pepper to taste

 

  • 454 g (1 lb.) cooked, skinless chicken, diced
  • 3 stalks celery, thinly sliced
  • 30 ml (2 tablespoons) raisins
  • 2 Paulared, Lobo or Cortland apples, unpeeled
  • Mesclun or salad
  • 45 ml (3 tablespoons) walnuts

Preparation

  1. In a large salad bowl, combine all dressing ingredients.
  2. Add chicken cubes, celery and raisins. Dice apples and add to mixture immediately. Stir to combine.
  3. In a serving bowl, arrange the mesclun or salad and place the chicken mixture on top. Garnish with walnuts. Serve immediately.
