Couscous salad with apples, bacon and feta cheese

Ingredients

  • 375 ml (1 1/2 cups) vegetable stock
  • 375 ml (1 1/2 cups) couscous
  • 15 ml (1 tablespoon) olive oil
  • salt and pepper to taste
  • 4 slices pre-cooked bacon
  • 2 apples - diced
  • 1 small red onion, diced
  • 125 ml (1/2 cup) crumbled feta cheese
  • 2 celery stalks, diced
  • 250 ml (1 cup) halved red raisins
  • 60 ml (1/4 cup) chopped fresh parsley
  • 30 ml (2 tablespoons) chopped fresh chives

For the vinaigrette :

  • 30 ml (2 tablespoons) olive oil
  • 30 ml (2 tablespoons) fresh lemon juice
  • 15 ml (1 tablespoon) whole-grain mustard
  • 5 ml (1 teaspoon) garlic powder
  • salt and pepper to taste

Preparation

  1. In a saucepan, bring the vegetable stock to the boil.
  2. In a bowl, toss couscous with oil. Pour boiling broth over couscous. Season with salt and pepper. Cover and leave to stand for 5 minutes before removing the seeds with a fork. Cool, then refrigerate for 15 minutes.
  3. Meanwhile, place the bacon slices on a microwave-safe plate. Reheat bacon according to package directions, then cut into pieces.
  4. Combine dressing ingredients in a salad bowl.
  5. Add the couscous, apples, bacon, onion, feta, celery, red grapes and herbs to the salad bowl. Stir to combine.
