Flaky apple fritters
These puff pastry doughnuts with Quebec apples are an easy, gourmet way to enjoy apples in a different way. Ingredients
2 Quebec apples
1 sheet puff pastry
1/4 cup (60 ml) white or maple sugar
1 tablespoon (15 ml) cinnamon
1/4 teaspoon (1.25 ml) cardamom
1 egg
2 teaspoons (10 ml) vanilla (optional)
Preparation
- Preheat oven to 375°F and place rack in center. Line a baking sheet with parchment paper.
- Slice apples into 1/4-inch slices. You should get about 8 slices. Using a knife, remove the center of the slice to give it a doughnut shape.
- Combine the sugar, cinnamon and cardamom in a bowl.
- Dip each apple slice into the sugar mixture, making sure to coat well.
- On a clean, floured work surface, roll out the puff pastry. Cut puff pastry into thin strips.
- Wrap the apple slices in puff pastry. More than one strip of puff pastry will be needed for each slice.
- In a small bowl, whisk together egg and vanilla. Brush donuts with egg mixture. Add a little sugar mixture to each doughnut and bake for 15 to 18 minutes, or until golden brown.
Tips and tricks
It is important to ensure that the hole in the center of the washers is large enough.
If the puff pastry is too soft, store the puff pastry strips in the refrigerator.
