Goat's cheese and apple puff pastry

- 2 rounds of frozen puff pastry
- 300 g unripened goat's cheese, cut into strips
- 2 apples, cored, unpeeled and thinly sliced
- 30 ml (2 tablespoons) olive oil
- 30 ml (2 tablespoons) fresh thyme
- Salt and pepper to taste
- Maple syrup or honey to taste
Preparation
- Preheat oven to 200°C (400°F). Roll out puff pastry and cut into 8 squares to make 16 portions.
- Place dough pieces on a parchment-lined baking sheet and prick with a fork. Place cheese in the center of each square, leaving a small border.
- Place several slices of apple on each square so that the cheese is completely covered. Brush apples with a little oil and sprinkle with thyme. Season to taste.
- Bake puff pastries for 20 to 25 minutes, or until pastry is cooked and edges are golden. Drizzle with maple syrup or honey and serve immediately.
