Grilled cheese and caramelized apple sandwich

Ingredients

Caramelized apples

  • A little butter
  • A little plantation brown sugar
  • 1 apple, unpeeled, cored and sliced

Sandwich

  • 2 large slices crusty bread
  • 50 g (1/2 cup) strong or medium cheddar, sliced
  • Ground pepper, to taste
  • Olive oil
  • Melted butter

Preparation

Caramelized apples

  1. In a non-stick pan, melt butter over medium-high heat. Sprinkle with sugar and add apple. Cook, stirring regularly, until apple slices are lightly caramelized.

Sandwich

  1. Place apple slices on a slice of bread, cover with cheese and top with more apples. Season with pepper and close the sandwich.
  2. Brush the outside of the sandwich with a mixture of oil and butter. Cook in a panini grill or skillet, pressing sandwich down with a weight until golden brown and cheese is runny.

Tips and tricks

The quality of the bread you use to make your sandwich is very important. Use a good farmhouse loaf or a loaf of crusty bread to give your sandwich a firm, thick texture. The apple-cheddar combination is fantastic, and one of my favorite sandwiches.
