Quebec cheese platter, apple chips and homemade mustarda

Ingredients

Quebec Apple Chips

  • 3 unpeeled Cortland apples

Syrup

  • 250 ml (1 cup) sugar
  • 250 ml (1 cup) water
  • Salt and pepper to taste

Mustarda house

  • 2 Cortland apples, peeled and quartered
  • 22.5 ml (1 ½ tablespoons) Dijon mustard
  • 30 ml (2 tablespoons) extra-virgin olive oil
  • 125 ml (½ cup) apple juice

Preparation

  1. Preheat oven to 70°C (160°F).
  2. To prepare the potato chips, slice the apples very thinly using a mandolin. Melt the sugar in the water, turning off the heat when completely melted. Leave to cool.
  3. Dip apple slices in syrup and drain well. Place on a baking sheet lined with parchment paper. Season with salt and pepper and place in the oven. Bake for 1 hour 30 minutes, turning the chips every 30 minutes until crisp. Set aside to cool.
  4. To prepare mustarda, pour all ingredients into a saucepan and cook over medium-low heat for 10 minutes, stirring occasionally. Transfer to a food processor and chill for 1 hour.
  5. Serve apple chips with a plate of Quebec cheeses such as Mamirolle, Cendré des prés, Les Trois princes, Tremblay or Blackburn. Accompany with mustarda.
