Quebec Pork Cutlets with Apples, Cranberries and Maple
Portions:
8Ingredients
- 8 Québec pork cutlets
- 15 ml (1 tablespoon) oil
- 15 ml (1 tablespoon) butter
- 2 Quebec apples, peeled and quartered
- A hint of nutmeg
- 1/8 lb (50g) dried cranberries
- 45 ml (3 tablespoons) maple syrup
- 1 shallot, chopped
- 100 ml (3/8 cup) apple juice
- 100 ml (3/8 cup) 15% country-style cream
Preparation
- Sauté the apples in a little butter over medium heat. At the end of cooking, season with nutmeg and deglaze with maple syrup.
- Add cranberries to skillet and let stand.
- In another frying pan, add a little oil and butter and quickly brown the cutlets.
- Remove the cutlets from the pan and add the shallots. Sauté quickly for 1 or 2 minutes.
- Deglaze with apple juice and reduce by half.
- Add the cream and cook for 2 minutes.
- Assembly: Place a small amount of applesauce on a cutlet and place another cutlet on top. Pour over the sauce and serve.
