Pulled beef burger, Spartan-style slaw

Ingredients

Ingredients for the beef

  • 4.8 kg (10 ½ pounds) beef, cubed
  • 1.2 kg (2 ½ pounds) white onions, thinly sliced
  • 600 g (1 1/3 pounds) Spartan apples, chopped
  • 150 g (3/4 cup) steak spices
  • 200 ml (4/5 cup) denatured red wine
  • 200 g (7 oz) demi-glace base
  • 75 g (1/3 cup) Club House Maple Bacon Seasoning

Ingredients for the slaw

  • 600 g (1 1/3 lb) green cabbage, thinly sliced
  • 15 g (1 tablespoon) salt
  • 15 g (1 tablespoon) pepper
  • 30 g (2 tablespoons) sugar
  • 30 ml (2 tablespoons) vegetable oil
  • 60 ml (4 tablespoons) rice vinegar

Preparation

Preparation (beef)

  1. Bring beef cubes, onions, apples, steak spices and wine to a simmer.
  2. Remove beef and shred.
  3. Return to the cooking juices and reduce until almost dry.
  4. Add demi-glace and bacon-maple seasoning.

Preparation(slaw)

  1. Combine all the ingredients for the cabbage and apple slaw.

Final assembly

  1. Place 150 g of shredded beef in a poppy seeded emperor loaf and garnish with 50 g of lettuce.
