Pulled beef burger, Spartan-style slaw

Ingredients for the beef
- 4.8 kg (10 ½ pounds) beef, cubed
- 1.2 kg (2 ½ pounds) white onions, thinly sliced
- 600 g (1 1/3 pounds) Spartan apples, chopped
- 150 g (3/4 cup) steak spices
- 200 ml (4/5 cup) denatured red wine
- 200 g (7 oz) demi-glace base
- 75 g (1/3 cup) Club House Maple Bacon Seasoning
Ingredients for the slaw
- 600 g (1 1/3 lb) green cabbage, thinly sliced
- 15 g (1 tablespoon) salt
- 15 g (1 tablespoon) pepper
- 30 g (2 tablespoons) sugar
- 30 ml (2 tablespoons) vegetable oil
- 60 ml (4 tablespoons) rice vinegar
Preparation
Preparation (beef)
- Bring beef cubes, onions, apples, steak spices and wine to a simmer.
- Remove beef and shred.
- Return to the cooking juices and reduce until almost dry.
- Add demi-glace and bacon-maple seasoning.
Preparation(slaw)
- Combine all the ingredients for the cabbage and apple slaw.
Final assembly
- Place 150 g of shredded beef in a poppy seeded emperor loaf and garnish with 50 g of lettuce.
