Pork and apple stew

Ingredients

  • 2 tablespoons vegetable oil
  • 900 g (2lb) pork cubes
  • 2 onions, chopped
  • 2 garlic cloves, finely chopped
  • 225 g (8 oz) lardons
  • 250 ml (1 cup) beef stock
  • 60 ml (1/4 cup) soy sauce
  • 500 ml (2 cups) sweet cider
  • 1 bay leaf
  • 5 McIntosh apples, unpeeled, quartered

Preparation

Slow cooker

  1. Heat vegetable oil in a large skillet. Add pork cubes and sauté over medium heat for about 8 minutes, until browned on all sides. Transfer the cubes to the slow cooker.
  2. Add the onions, garlic and bacon to the pan. Sauté for 5 minutes over medium heat. Transfer to slow cooker. Pour in beef broth, soy sauce and cider. Add bay leaf. Cover and cook on low for 6 hours.
  3. Add the apple quarters and bake for 40 minutes at a high temperature.
  4. Serve with green vegetables.

Simmered

  1. Heat the vegetable oil in a large saucepan. Add onions, garlic and bacon. Sauté for 3 minutes over medium heat.
  2. Add pork cubes and sauté for about 8 minutes, browning all sides. Pour in beef broth, soy sauce and cider. Add bay leaves. Bring to the boil. Reduce heat. Cover halfway and simmer for 2 hours.
  3. Add the apple quarters and cook for 20 minutes over a low heat.
  4. Serve with green vegetables.
