Apple and spice bread pudding

- 2 tablespoons melted butter + 1 tablespoon (for the mould)
- 6 slices brioche, crust removed
- 4 apples, quartered
- 4 large eggs
- 250 ml (1 cup) 35% whipping cream
- 200 g (1 cup) sugar
- 3 tbsp. applesauce
- 1/2 teaspoon cardamom
Preparation
- Preheat oven to 200°C (400°F). Butter a 23 x 13 cm (9 x 5 in.) loaf pan.
- Cut brioche slices into triangles. Brush with melted butter and place in the tin. Cover with apple wedges.
- In a bowl, whisk together eggs, cream and sugar. Stir in apple mixture, cinnamon and cardamom. Slowly pour into mold. Let stand 15 minutes.
- Bake for 35 minutes or until golden.
- Remove from oven and serve immediately.
