Spring salad with Asian apples and pears

Ingredients

  • 15 ml (1 tablespoon) Compliments olive oil
  • 30 ml (2 tablespoons) white wine vinegar
  • 15 ml (1 tablespoon) maple syrup
  • 500 ml (2 cups) Compliments Spring Mix
  • 500 ml (2 cups) shredded escarole
  • 2 Asian pears, cut into matchsticks
  • 2 red apples, cut into matchsticks
  • 1/2 red onion, thinly sliced
  • Salt and pepper to taste
  • Parmesan shavings for garnish (approx. 30 g 1 oz)

*Soaking red onions in cold water for about 15 minutes softens the taste. Change the water once or twice.

Preparation

  1. In a large bowl, combine olive oil, white wine vinegar and maple syrup.
  2. Add the spring mix, escarole, Asian pears, apples and red onion. Stir to coat well. Season with salt and pepper to taste.
  3. Divide between 4 plates and garnish generously with Parmesan shavings. Serve with grilled fish or chicken.

To prepare a meal salad, add strips of grilled chicken breast or grilled shrimp to the lettuce mixture before garnishing with Parmesan shavings. This recipe makes 4 servings.
