Sweet and spicy chicken breast with apples

- 4 skinless chicken breasts
- 3 yellow-fleshed potatoes
- 1 red onion
- 8 Nantes carrots
- 3 Spartan apples
- 30 ml (2 tablespoons) olive oil
- 15 ml (1 tablespoon) fresh thyme, chopped
- 15 ml (1 tablespoon) chopped fresh oregano
- 2 bay leaves
- Salt and freshly ground pepper to taste
Dry marinade
- 30 ml (2 tablespoons) maple sugar
- 5 ml (1 teaspoon) Espelette pepper
- 5 ml (1 teaspoon) smoked paprika
- 15 ml (1 tablespoon) garlic powder
- 15 ml (1 tablespoon) crushed coriander seeds
- 15 ml (1 tablespoon) fresh thyme, chopped
- Salt and freshly ground pepper to taste
Preparation
- Preheat oven to 205 c (400 f)
- In a bowl, combine dry marinade ingredients.
- Season chicken breasts with dry marinade.
- Place the breasts on a baking sheet lined with parchment paper.
- Cut potatoes and onion into small cubes.
- Cut carrots in half lengthwise and apples into quarters.
- In a bowl, combine vegetables, Spartan apples, oil, herbs and seasoning.
- Spread this mixture on the baking sheet with the breasts.
- Bake for 25 to 30 minutes, until the chicken has lost its pink tinge.
