Sweet and spicy chicken breast with apples

Ingredients

  • 4 skinless chicken breasts
  • 3 yellow-fleshed potatoes
  • 1 red onion
  • 8 Nantes carrots
  • 3 Spartan apples
  • 30 ml (2 tablespoons) olive oil
  • 15 ml (1 tablespoon) fresh thyme, chopped
  • 15 ml (1 tablespoon) chopped fresh oregano
  • 2 bay leaves
  • Salt and freshly ground pepper to taste

Dry marinade

  • 30 ml (2 tablespoons) maple sugar
  • 5 ml (1 teaspoon) Espelette pepper
  • 5 ml (1 teaspoon) smoked paprika
  • 15 ml (1 tablespoon) garlic powder
  • 15 ml (1 tablespoon) crushed coriander seeds
  • 15 ml (1 tablespoon) fresh thyme, chopped
  • Salt and freshly ground pepper to taste

Preparation

  1. Preheat oven to 205 c (400 f)
  2. In a bowl, combine dry marinade ingredients.
  3. Season chicken breasts with dry marinade.
  4. Place the breasts on a baking sheet lined with parchment paper.
  5. Cut potatoes and onion into small cubes.
  6. Cut carrots in half lengthwise and apples into quarters.
  7. In a bowl, combine vegetables, Spartan apples, oil, herbs and seasoning.
  8. Spread this mixture on the baking sheet with the breasts.
  9. Bake for 25 to 30 minutes, until the chicken has lost its pink tinge.
