Three-fruit muffins

- 500 ml (2 cups) whole-wheat flour
- 125 ml (1/2 cup) brown sugar
- 10 ml (2 teaspoons) baking powder
- 10 ml (2 teaspoons) cinnamon
- 2 ml (1/2 teaspoon) baking soda
- 1 ml (1/4 teaspoon) ground ginger
- 1 ml (1/4 teaspoon) nutmeg
- 1 pinch salt
- 125 ml (1/2 cup) milk
- 125 ml (1/2 cup) applesauce
- 1 egg, lightly beaten
- 1 ripe banana, mashed
- 1 apple, peeled, cored and chopped
- 125 ml (1/2 cup) dried cranberries
Preparation
- Preheat oven to 190°C (375°F).
- In a large bowl, combine flour, brown sugar, baking powder, cinnamon, baking soda, ginger, nutmeg and salt.
- In a separate bowl, combine milk, applesauce, egg, banana, apple and cranberries. Stir into flour mixture just enough to moisten batter. Divide batter among 12 non-stick muffin cups.
- Bake for about 20 minutes, or until a toothpick comes out clean.
Tips and tricks
For less fat and more flavour in your cakes and muffins, substitute applesauce for half the required amount of fat.
