Three-fruit muffins

Ingredients

  • 500 ml (2 cups) whole-wheat flour
  • 125 ml (1/2 cup) brown sugar
  • 10 ml (2 teaspoons) baking powder
  • 10 ml (2 teaspoons) cinnamon
  • 2 ml (1/2 teaspoon) baking soda
  • 1 ml (1/4 teaspoon) ground ginger
  • 1 ml (1/4 teaspoon) nutmeg
  • 1 pinch salt
  • 125 ml (1/2 cup) milk
  • 125 ml (1/2 cup) applesauce
  • 1 egg, lightly beaten
  • 1 ripe banana, mashed
  • 1 apple, peeled, cored and chopped
  • 125 ml (1/2 cup) dried cranberries

Preparation

  1. Preheat oven to 190°C (375°F).
  2. In a large bowl, combine flour, brown sugar, baking powder, cinnamon, baking soda, ginger, nutmeg and salt.
  3. In a separate bowl, combine milk, applesauce, egg, banana, apple and cranberries. Stir into flour mixture just enough to moisten batter. Divide batter among 12 non-stick muffin cups.
  4. Bake for about 20 minutes, or until a toothpick comes out clean.

Tips and tricks

For less fat and more flavour in your cakes and muffins, substitute applesauce for half the required amount of fat.
