Traditional Waldorf salad

- 1 Cortland apple, diced
- 1 Honeycrisp apple, diced
- 1 stalk celery, diced (small cubes)
- 1 green shallot, finely chopped
- 75 ml (1/4 cup) raisins
- 75 ml (1/4 cup) walnuts
- 75 ml (1/4 cup) mayonnaise
- 30 ml (2 tablespoons) water
- 15 ml (1 tablespoon) apple cider vinegar
- 125 g (1/4 lb) blue cheese
- 30 ml (2 tablespoons) chopped parsley
- Salt and pepper to taste
Preparation
- Mix together mayonnaise, water, vinegar, half the parsley, salt and pepper. Set aside for later use.
- Place the apples, celery, raisins and walnuts in a bowl.
- Add the mayonnaise and mix gently.
- Serve in a bowl.
- Garnish with blue cheese and chopped parsley.
Tips and tricks
To prevent the apples from turning brown, quickly sprinkle them with freshly squeezed lemon juice after dicing. This will also add a touch of freshness to your salad.
You can personalize your salad by using different kinds of nuts: walnuts are classic, but pecans or slivered almonds will add just as delicious a taste.
If you prefer a sweeter taste, opt for golden raisins or even Quebec dried cranberries for a colorful, local touch.
For a lighter version of the vinaigrette, you can replace some of the mayonnaise with plain yogurt. This will give it a lighter texture and a slightly tangy flavour.
Waldorf salad is ideal as an appetizer, to accompany grilled meats, or even as a light main course on warmer days!
