Bagel with turkey, brie, cucumber and apple

2 mini-cucumbers
1 Quebec apple
4 bagels with
seeds
160 ml (²⁄³ cup)
light sour cream
15 ml (1 tablespoon)
Dijon mustard
15 ml (1 tablespoon) honey
12 slices smoked turkey
200 g (about ½ lb) sliced brie* cheese
* Cheddar or mozzarella cheese can also be used, depending on taste.
Preparation
Using a mandolin, finely slice the cucumbers and apple.
Cut bagels in half lengthwise.
In a bowl, combine sour cream, mustard and honey. Spread on bagels.
Garnish bagels with turkey, brie, cucumber and apple. Close bagels.
