Sliced turkey, Quebec Cortland apple sauce and fresh herbs

- 2 turkey fillets, thinly sliced (approx. 250 g / 8 oz each)
- 10 ml (2 teaspoons) clarified butter* (optional)
- 1 shallot, chopped
- 1 Quebec Cortland apple, grated
- 125 ml (1/2 cup) apple must (or apple juice)
- 125 ml (1/2 cup) chicken broth or brown poultry stock
- 1 Quebec Cortland apple, sliced
- A few sage leaves (or another fresh herb, to taste)
- salt and freshly ground pepper to taste
*Clarified butter is prepared by gently heating 454 g (1 lb) of butter. Once it has melted, skim the surface and decant to remove the whey. This step increases the melting point of the butter. Clarified butter also keeps longer in the refrigerator than regular butter.
Preparation
- Sauté thinly sliced turkey fillets in butter until golden brown.
- Add the shallot and grated Cortland apple and sauté for 2 minutes.
- Deglaze with apple must and reduce by half.
- Add chicken broth, Cortland apple slices and sage. Reduce.
- Season with salt and pepper and serve with barley pilaf and a green vegetable of your choice.
