Turkey meatballs with extra-creamy apple sauce

Ingredients

Quebec turkey meatballs

  • 675 g (1 1/2 lb.) Québec ground turkey
  • 1 Québec Quality McIntosh or Cortland apple, peeled and grated
  • 1 cup (250 ml) gluten-free Rice Krispies-type cereal crumbs, obtained in a blender
  • 1/3 cup (80 ml) chopped walnuts
  • 1/4 cup (60 ml) chopped fresh sage
  • 2 green onions, chopped
  • 1 egg
  • 1 clove garlic, minced
  • 1 tsp (5 ml) fennel seeds, crushed
  • 1 teaspoon (5 ml) salt
  • Olive oil to brush the top of the dumplings

Extra Creamy Quebec Apple Sauce

  • 2 tablespoons (30 ml) olive oil
  • 1/3 cup (80 ml) chopped French shallots
  • 2 Québec Quality McIntosh or Cortland apples, cubed
  • 1 teaspoon (5 ml) salt
  • 1/3 cup (80 ml) apple cider
  • 1/2 cup (125 ml) chicken broth
  • 1 cup (250 ml) Belsoy soy cream

Trim 

  • 1/2 cup (125 ml) Québec Quality McIntosh or Cortland apple, finely diced
  • 1/4 cup (60 ml) finely chopped fresh parsley

Preparation

Quebec turkey meatballs

  1. Place the rack in the center of an oven preheated to 400°. Line a baking sheet with parchment paper.
  2. In a large bowl, mix all turkey meatball ingredients. Shape into golf-ball-sized balls and place on baking sheet. Brush tops with oil. Bake for 20 minutes.

Extra Creamy Quebec Apple Sauce

  1. In a non-stick frying pan over medium heat, sauté the shallot, apples and salt in the oil for 5 minutes.
  2. Deglaze with apple cider and cook for a further 2 minutes.
  3. Pour in the stock and Belsoy cream and bring to the boil. Immediately remove from heat and pour into a blender. Blend until very smooth.
  4. Serve with dumplings and garnish with diced apples and parsley. Serve with a bowl of pasta or julienned pan-fried zucchini.
