Apple and maple pie

Ingredients

Crust

  • 170 ml (2/3 cup) graham cracker crumbs
  • 125 ml (1/2 cup) whole-wheat flour
  • 125 ml (1/2 cup) ground whole almonds
  • 30 ml (2 tablespoons) maple syrup
  • 30 ml (2 tablespoons) melted butter or margarine
  • 1 pinch salt

Filling

  • 1 liter (4 cups) apples (Cortland, Empire, Lobo), peeled, cored and sliced
  • 125 ml (1/2 cup) plain yogurt
  • 250 ml (1 cup) maple syrup
  • 125 ml (1/2 cup) whole-wheat flour
  • 1 egg

Trim

  • 60 ml (1/4 cup) maple sugar chips
  • 15 ml (1 tablespoon) pine nuts
  • A little cinnamon

Preparation

  1. Preheat oven to 160°C (325°F).
  2. In a bowl, evenly mix all crust ingredients and press into the bottom of a 23 cm (9") pie plate.
  3. Bake for 12 minutes. Remove from oven and increase temperature to 190°C (375°F).
  4. Mix filling ingredients in a bowl. Pour this mixture into the crust.
  5. Sprinkle maple sugar chips, pine nuts and cinnamon over the top of the tart.
  6. Bake for 45 minutes.
