Apple and maple pie

Crust
- 170 ml (2/3 cup) graham cracker crumbs
- 125 ml (1/2 cup) whole-wheat flour
- 125 ml (1/2 cup) ground whole almonds
- 30 ml (2 tablespoons) maple syrup
- 30 ml (2 tablespoons) melted butter or margarine
- 1 pinch salt
Filling
- 1 liter (4 cups) apples (Cortland, Empire, Lobo), peeled, cored and sliced
- 125 ml (1/2 cup) plain yogurt
- 250 ml (1 cup) maple syrup
- 125 ml (1/2 cup) whole-wheat flour
- 1 egg
Trim
- 60 ml (1/4 cup) maple sugar chips
- 15 ml (1 tablespoon) pine nuts
- A little cinnamon
Preparation
- Preheat oven to 160°C (325°F).
- In a bowl, evenly mix all crust ingredients and press into the bottom of a 23 cm (9") pie plate.
- Bake for 12 minutes. Remove from oven and increase temperature to 190°C (375°F).
- Mix filling ingredients in a bowl. Pour this mixture into the crust.
- Sprinkle maple sugar chips, pine nuts and cinnamon over the top of the tart.
- Bake for 45 minutes.

Maple sugar nuggets are sold mainly in health food stores and delicatessens. You can also order them from your favorite grocer. If necessary, replace them with grated maple sugar.
