Apple and pear parfaits

Ingredients

For the granola (1.5 liters - 6 cups):

  • 410 ml (1 ⅔ cup) quick-cooking rolled oats
  • 250 ml (1 cup) soy flakes
  • 180 ml (¾ cup) sliced almonds
  • 30 ml (2 tablespoons) maple flakes
  • 1.25 ml (¼ tsp.) cinnamon
  • 1 pinch salt
  • 80 ml (1/3 cup) maple syrup
  • 60 ml (¼ cup) almond butter
  • 60 ml (¼ cup) melted coconut oil

For the perfect :

  • 2 pears, diced
  • 2 apples, diced
  • 60 ml (¼ cup) maple syrup
  • 1 pinch cinnamon
  • 375 ml (1 ½ cups) 0% plain Greek yogurt
  • 5 ml (1 teaspoon) vanilla

Preparation

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, mix the rolled oats with the soy flakes, almonds, maple flakes, cinnamon and salt.
  3. In a saucepan, combine the maple syrup for the granola with the almond butter and coconut oil. Melt over low heat.
  4. Pour maple syrup mixture over dry ingredients. Stir to coat ingredients well with maple syrup mixture.
  5. Spread the mixture on a baking sheet lined with parchment paper. Bake for 15 minutes, stirring every 5 minutes. Remove from oven and let cool completely.
  6. Scoop out 300 ml (about 1 ¼ cups) of granola for the parfaits. Reserve remaining granola in an airtight container.
  7. In a second bowl, combine pears and apples with maple syrup and cinnamon.
  8. In a third bowl, combine yogurt and vanilla. Add fruit mixture and stir.
  9. Divide half the granola between four verrines, followed by the yogurt mixture. Cover with remaining granola.
