Apple and pear parfaits

For the granola (1.5 liters - 6 cups):
- 410 ml (1 ⅔ cup) quick-cooking rolled oats
- 250 ml (1 cup) soy flakes
- 180 ml (¾ cup) sliced almonds
- 30 ml (2 tablespoons) maple flakes
- 1.25 ml (¼ tsp.) cinnamon
- 1 pinch salt
- 80 ml (1/3 cup) maple syrup
- 60 ml (¼ cup) almond butter
- 60 ml (¼ cup) melted coconut oil
For the perfect :
- 2 pears, diced
- 2 apples, diced
- 60 ml (¼ cup) maple syrup
- 1 pinch cinnamon
- 375 ml (1 ½ cups) 0% plain Greek yogurt
- 5 ml (1 teaspoon) vanilla
Preparation
- Preheat oven to 180°C (350°F).
- In a bowl, mix the rolled oats with the soy flakes, almonds, maple flakes, cinnamon and salt.
- In a saucepan, combine the maple syrup for the granola with the almond butter and coconut oil. Melt over low heat.
- Pour maple syrup mixture over dry ingredients. Stir to coat ingredients well with maple syrup mixture.
- Spread the mixture on a baking sheet lined with parchment paper. Bake for 15 minutes, stirring every 5 minutes. Remove from oven and let cool completely.
- Scoop out 300 ml (about 1 ¼ cups) of granola for the parfaits. Reserve remaining granola in an airtight container.
- In a second bowl, combine pears and apples with maple syrup and cinnamon.
- In a third bowl, combine yogurt and vanilla. Add fruit mixture and stir.
- Divide half the granola between four verrines, followed by the yogurt mixture. Cover with remaining granola.
