Apple, cheese and walnut sandwiches

These apple, cheese and walnut tartines combine simplicity, refinement and local flavors in a recipe perfect for aperitif, brunch or a light lunch. In just a few minutes, you'll have an irresistible combination of crisp Quebec apples, melting cheese (such as Brie, Camembert or aged Cheddar) and toasted walnuts, all on a slice of crusty bread.

It's an ideal way to showcase local apples, which are used here fresh, thinly sliced, for their natural crunchy and slightly tart or sweet taste, depending on the variety chosen. The contrast between the sweetness of the fruit, the richness of the cheese and the crunchy of the walnuts creates a bite that's balanced and full of character.

Endlessly customizable, these tartines can also be spiced up with a drizzle of honey, a touch of old-fashioned mustard or a few arugula leaves. A recipe as beautiful as it is delicious, to be enjoyed at any time of day!

Ingredients

4 slices of farmhouse bread with seeds or nuts

100 g cottage cheese (blend in food processor for smooth texture) or ricotta cheese

1 Québec apple, thinly sliced (e.g. Cortland or Empire)

1/4 cup walnuts or pecans, lightly toasted and chopped

2 tbsp. honey or maple syrup

A pinch of fresh or dried thyme (optional)

Preparation

  1. Lightly toast bread slices until crisp. Spread each slice with cottage cheese or ricotta.
  2. Fan the apple slices over the top. Sprinkle with toasted walnuts and add a drizzle of honey or maple syrup.
  3. Add a pinch of fresh thyme (or dried thyme). Serve immediately with soup.

Serve with apple and winter vegetable soup as a side dish.
