Crab and apple canapé

- 1 tablespoon butter
- 1 tablespoon green onion, finely chopped
- 110 g (4 oz) cream cheese
- 225 g (8 oz) crabmeat, flaked
- 2 apples, small dice
- 1/4 teaspoon salt
- 1 tsp. cayenne pepper
- 1 tsp. fresh lemon juice
- 6 slices of toast, each peeled and cut into pieces
- 2 tbsp. finely chopped chives
- 1/2 teaspoon paprika
Preparation
- Melt butter in a small saucepan. Add green onion and cook over medium heat for 5 minutes, or until onion is lightly browned. Remove from heat. Add cream cheese, crab and diced apples. Stir to combine. Add salt, cayenne pepper and lemon juice.
- Divide the crab mixture between the pieces of toast.
- Heat oven broiler to maximum.
- Place canapés under broiler and cook for 1 minute. Transfer canapés to a platter. Sprinkle with chives and paprika. Serve as desired.
