Crab and apple canapé

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon green onion, finely chopped
  • 110 g (4 oz) cream cheese
  • 225 g (8 oz) crabmeat, flaked
  • 2 apples, small dice
  • 1/4 teaspoon salt
  • 1 tsp. cayenne pepper
  • 1 tsp. fresh lemon juice
  • 6 slices of toast, each peeled and cut into pieces
  • 2 tbsp. finely chopped chives
  • 1/2 teaspoon paprika

Preparation

  1. Melt butter in a small saucepan. Add green onion and cook over medium heat for 5 minutes, or until onion is lightly browned. Remove from heat. Add cream cheese, crab and diced apples. Stir to combine. Add salt, cayenne pepper and lemon juice.
  2. Divide the crab mixture between the pieces of toast.
  3. Heat oven broiler to maximum.
  4. Place canapés under broiler and cook for 1 minute. Transfer canapés to a platter. Sprinkle with chives and paprika. Serve as desired.
