Boston lettuce with shallots and apples

- 3 tbsp. mayonnaise
- 2 teaspoons Dijon mustard
- 125 ml (1/2) apple juice
- 1 Boston lettuce, chopped
- 375 g (2 cups) cooked rice
- 2 shallots, finely chopped
- 2 apples, chopped
- 1 Boston lettuce, leaves removed
- 1 tsp. paprika
- Salt and pepper
Preparation
- In a bowl, combine mayonnaise, mustard and apple juice. Add chopped lettuce, cooked rice, shallots and apples. Season with salt and pepper. Mix gently.
- Divide mixture among Boston lettuce leaves. Sprinkle with paprika and serve immediately.
