Lobster and apple salad

Ingredients

  • 900 g (2 lb) crabmeat
  • 3 tablespoons mayonnaise
  • 250 ml (1 cup) crème fraîche
  • 1 tsp. cayenne pepper
  • 1 pinch salt
  • 4 stalks celery, chopped
  • 3 unpeeled apples, quartered
  • 2 tbsp. chopped chives
  • Marinade

    • 60 ml (1/4 cup) olive oil
    • 60 ml (1/4 cup) apple juice
    • 1 garlic clove, crushed
    • 1 tsp. Dijon mustard
    • 1 pinch sugar
    • 1 pinch salt

Preparation

  1. Prepare marinade. In a bowl, combine olive oil, apple juice, garlic, mustard, sugar and salt. Add lobster meat and mix. Cover and let stand 30 minutes. Drain.
  2. In a large bowl, combine mayonnaise, crème fraîche, cayenne pepper and salt. Add drained lobster, celery, apple wedges and chives. Mix well.
  3. Spoon the salad into bowls and serve.
