Lobster and apple salad

- 900 g (2 lb) crabmeat
- 3 tablespoons mayonnaise
- 250 ml (1 cup) crème fraîche
- 1 tsp. cayenne pepper
- 1 pinch salt
- 4 stalks celery, chopped
- 3 unpeeled apples, quartered
- 2 tbsp. chopped chives
- 60 ml (1/4 cup) olive oil
- 60 ml (1/4 cup) apple juice
- 1 garlic clove, crushed
- 1 tsp. Dijon mustard
- 1 pinch sugar
- 1 pinch salt
Marinade
Preparation
- Prepare marinade. In a bowl, combine olive oil, apple juice, garlic, mustard, sugar and salt. Add lobster meat and mix. Cover and let stand 30 minutes. Drain.
- In a large bowl, combine mayonnaise, crème fraîche, cayenne pepper and salt. Add drained lobster, celery, apple wedges and chives. Mix well.
- Spoon the salad into bowls and serve.
