Macaroni salad with apples and coriander

Ingredients

  • 225 g (8 oz) cut macaroni
  • 2 stalks celery, finely chopped
  • Vegetable oil (for barbecue grill)
  • 4 large apples, quartered
  • 250 ml (1 cup) mayonnaise
  • 125 ml (1/2 cup) plain yogurt
  • 1 tablespoon apple juice
  • 1 small bunch coriander, finely chopped
  • 1 tsp. caraway seeds
  • Salt and pepper
  • 250 ml (1 cup) crème fraiche

Preparation

  1. In a pot of boiling salted water, cook the macaroni for about 9 minutes. Drain and transfer to a large bowl. Add celery.
  2. Preheat barbecue grill to high temperature. Lightly oil the grill.
  3. Place the apple wedges on the barbecue grill and cook for about 3 minutes on each side, or until nicely grilled.
  4. Meanwhile, in a bowl, combine mayonnaise, yogurt, apple juice, coriander and caraway seeds. Stir into macaroni. Season with salt and pepper.
  5. Using tongs, transfer the roasted apples to the bowl and toss. Serve immediately with crème fraiche.
