Macaroni salad with apples and coriander

- 225 g (8 oz) cut macaroni
- 2 stalks celery, finely chopped
- Vegetable oil (for barbecue grill)
- 4 large apples, quartered
- 250 ml (1 cup) mayonnaise
- 125 ml (1/2 cup) plain yogurt
- 1 tablespoon apple juice
- 1 small bunch coriander, finely chopped
- 1 tsp. caraway seeds
- Salt and pepper
- 250 ml (1 cup) crème fraiche
Preparation
- In a pot of boiling salted water, cook the macaroni for about 9 minutes. Drain and transfer to a large bowl. Add celery.
- Preheat barbecue grill to high temperature. Lightly oil the grill.
- Place the apple wedges on the barbecue grill and cook for about 3 minutes on each side, or until nicely grilled.
- Meanwhile, in a bowl, combine mayonnaise, yogurt, apple juice, coriander and caraway seeds. Stir into macaroni. Season with salt and pepper.
- Using tongs, transfer the roasted apples to the bowl and toss. Serve immediately with crème fraiche.
