Maple apple gratin with cottage cheese

Ingredients

  • 10 Lobo apples, cored, peeled and sliced into 5 mm (1/4″) wedges
  • 125 ml (1/2 cup) low-fat cottage cheese
  • 125 ml (1/2 cup) medium maple syrup
  • 2.5 ml (1/2 tsp.) ground mace
  • 2.5 ml (1/2 teaspoon) vanilla
  • 125 ml (1/2 cup) whole-wheat flour
  • 250 ml (1 cup) oat flour
  • 125 ml (1/2 cup) raw brown sugar
  • 2.5 ml (1/2 teaspoon) baking soda
  • 125 ml (1/2 cup) non-hydrogenated margarine

Preparation

  1. In a mixing bowl, combine apples, cottage cheese and maple syrup.
  2. Spoon the mixture into 10 ramekins or gratin dishes.
  3. In a separate bowl, combine flours, brown sugar, baking soda and margarine. Mix well.
  4. Spoon the mixture over the apples.
  5. Bake at 180°C (350°F) for 45 minutes and serve.
