All-Garni Maple Oatmeal

Ingredients

  • Juice of 1 lemon
  • 2 Empire or Ambrosia apples, cubed
  • 1 L (4 cups) water
  • 500 ml (2 cups) quick-cooking oatmeal
  • 1 pinch salt
  • 1 pinch cinnamon
  • 1 pinch nutmeg
  • 125 ml (1/2 cup) milk
  • 250 ml (1 cup) maple syrup
  • 125 ml (1/2 cup) pecans or other nuts, toasted and coarsely crushed

Preparation

  1. In a bowl, combine lemon juice and apple or pear cubes, coating well to prevent darkening. Set aside for later use.
  2. Meanwhile, in a large saucepan, combine the water, oatmeal, salt, cinnamon and nutmeg. Bring to the boil and cook for 5 minutes, stirring constantly. Remove from heat and stir in milk and maple syrup.
  3. Pour the hot oatmeal into bowls and garnish with reserved fruit and walnuts. Serve immediately.
