These caramelized apple and cheddar mini quiches are the perfect combination of sweetness and indulgence. Ideal for a festive brunch, a chic aperitif or lunch on the go, they surprise with their balance between the sweetness of Quebec apples and the character of melting cheddar.

The caramelized apple adds a melt-in-your-mouth, slightly sweet touch, while the cheese creates a creamy, comforting texture. Ingredients

2 tbsp. butter

2 gala apples, grated

½ teaspoon balsamic vinegar

1 tsp. maple syrup

1 cup strong cheddar cheese, grated

4 eggs

¼ cup 35% cooking cream

1 tsp. Dijon mustard

1 tbsp. chopped fresh chives

Vegetable oil

Preparation

 

  1. Preheat oven to 350 F.
  2. In a skillet over medium-low heat with the butter, brown the apples with a pinch of salt for 5 minutes.
  3. Add the balsamic vinegar and maple syrup, and cook for a further 1 minute, stirring constantly. Allow to cool.
  4. In a bowl, beat the eggs, then stir in the cream, mustard and then add the apples, cheddar and chives.
  5. Spoon egg mixture into greased muffin tins with vegetable oil.
  6. Place in the oven for 15-20 minutes, or until the quiches are cooked, then leave to cool for 10 minutes before serving.

Tips and tricks

  • Choose an apple such as Cortland or Empire to hold up to cooking without becoming too sweet.
  • Add a touch of nutmeg or rosemary to enhance the aromas.
  • Prepare in advance and reheat in the oven a few minutes before serving.
  • Offer them on a platter with a green salad for a complete meal.
  • Use shortcrust or puff pastry, depending on the desired texture.
