Quebec Apple Cake

Ingredients

Paste

  • 125 ml (1/2 cup) butter
  • 2 eggs
  • 180 ml (3/4 cup) sugar
  • 500 ml (2 cups) flour
  • 10 ml (2 teaspoons) baking powder
  • 1.8 kg (4 lb) Québec McIntosh apples (about 15 peeled and cored)

Cream

  • 125 ml (1/2 cup) butter
  • 2 eggs
  • 180 ml (3/4 cup) sugar
  • 5 ml (1 teaspoon) vanilla
  • 60 ml (1/4 cup) toasted almonds

Preparation

  1. Preheat oven to 180°C (350°F).
  2. Beat the eggs and add the sugar and melted butter. Set aside.
  3. Mix flour and baking powder and stir into first mixture.
  4. Line the sides and bottom of a buttered 22 cm (9-inch) springform pan with the mixture.
  5. Cut the apples (except for 3) into quarters and place in the mould. Cut the remaining 3 apples into thin strips and decorate the top of the cake. Bake for 1 h 15.
  6. Meanwhile, beat the eggs and add the sugar, vanilla and melted butter.
  7. Remove the dessert from the oven and add the cream to the cake, making sure it soaks into the apples.
  8. Sprinkle with toasted almonds and continue baking for 25 to 30 minutes.
  9. Cool and refrigerate 24 hours before serving.
