Roasted apples

- 4 Quebec-quality Cortland apples (Ambrosia or Honeycrips)
- ½ package (150 g) creamy fig and balsamic cheese (Boursin type)
- 30 ml (2 tablespoons) balsamic vinegar coulis
Preparation
- Preheat oven to 190°C (375°F).
- Cut the apples in half and remove the hearts using a melon baller.
- In an ovenproof skillet, melt a little butter over medium heat. Place the apple halves in the pan, cut side down. Cook for 1-2 minutes, until golden brown.
- Turn the apple halves over and bake for a further 10 minutes. Remove from oven.
- Top the cavity with cheese and continue baking for 4 minutes.
- Remove from oven and drizzle with balsamic vinegar coulis.
