Roasted apples

Ingredients

  • 4 Quebec-quality Cortland apples (Ambrosia or Honeycrips)
  • ½ package (150 g) creamy fig and balsamic cheese (Boursin type)
  • 30 ml (2 tablespoons) balsamic vinegar coulis

Preparation

  1. Preheat oven to 190°C (375°F).
  2. Cut the apples in half and remove the hearts using a melon baller.
  3. In an ovenproof skillet, melt a little butter over medium heat. Place the apple halves in the pan, cut side down. Cook for 1-2 minutes, until golden brown.
  4. Turn the apple halves over and bake for a further 10 minutes. Remove from oven.
  5. Top the cavity with cheese and continue baking for 4 minutes.
  6. Remove from oven and drizzle with balsamic vinegar coulis.
